From Arabic اِبْن آدَم‎ (ibn ʔādam, “man, human”, literally “son of Adam”). By surface analysis, iben +‎ Adam. The Maltese inflections by analogy with an active participle such as riekeb, riekba, rekbin (“riding, astride”).
