Compound of お (o-, honorific prefix) + 新香 (shinkō, shinko, literally “new fragrance”, as these were traditionally only pickled for a few days).[1][2] Usage appears to be shifting now from meaning specifically lightly pickled vegetables, to meaning pickled vegetables in general.
