Borrowed from (c. 16th-18th century) Early Modern Spanish virgen. In Early Modern Spanish, Spanish ⟨g⟩ (before ⟨e⟩ or ⟨i⟩) was pronounced /ʃ/. /ʃ/ became /s/ as common with other early borrowings. Doublet of birhen.
